Yup. I am going to be making some fudge.  Pecan fudge for my Daddy, Rum Pecan Fudge for my step-mom, chocolate fudge for my sister and a few friends and maybe some Irish Cream Fudge.  The only concern I have is the weather.

Here in the South, the weather can be a complicated thing when it comes to candy making. Since there is so much humidity it can affect it so bad.  I do not have a “controlled temperature” kitchen.  Of course, I would LOVE one, but I cannot afford one.

Christmas is approaching fast and I want to have all the fudge made by Wednesday.  I still need to wrap some gifts.  Of course it would help if I went and purchased the last three gifts I need to get….
